Eggroll Soup Recipe

You are allowed to have an unlimited amount of Eggroll Soup, but you must count the lean protein added and limit it to 6 oz for women and 8 oz for men daily. Use low sodium and low-fat broth for reduced calories.

Ingredients

3 garlic cloves, minced
2 teaspoons ground ginger
1 tablespoon olive oil
1 small head of cabbage, shredded
2 carrots, shredded
8 cups of low fat, low sodium chicken broth (depending on size of cabbage)
1⁄2 cup soy sauce (depending on saltiness of chicken broth)
cooking spray

Instructions

Brown minced garlic, ginger, and olive oil. While that is browning, shred cabbage and carrots.

Once browned add cabbage and carrots.

Once veggies are cooked a bit, add enough broth to cover all the cabbage and then a bit more.

Add soy sauce (up to ½ cup – how much is based on taste preference)
